Zucchini and Squash Soup
For this soup, you will need some zucchini, squash, onion, rosemary, garlic, soup stock, butter, olive oil, parmesan cheese, and salt. Chop up the onion, rosemary, and garlic and sauté. Mix with a soup stock of your choice and let simmer. Next chop up the zucchini and squash, cook, then mash them up. Mix into the soup stock along with the other ingredients. Top off with the parmesan cheese.
Spicy White Bean Soup
This recipe requires some tomatillos, jalapeno peppers, white beans, flour, broth, garlic, oregano, onion, green chilli, flour, lime juice, salt, olive oil and ground coriander. First, bake the tomatillos along with the jalapeno. Next, sauté the onion, oregano, salt, coriander, and the green chilli. Afterwards, mix in the flour and broth of your choice. Finally, after this has thickened, add the jalapeno, tomatillos, and beans. Let this cook for a few minutes
Healthy Tomato and Kale Soup
For this soup, you will need some minced garlic, carrots, onion, tomatoes, tomato puree, red chilli, salt, black pepper, soup stock, olive oil, any type of beans, and kale. Sauté the onion, garlic, and carrots. After about five minutes, add the tomatoes (chopped). Next add some tomato puree, as well as the soup stock. While stirring, add the red chilli and salt. Let this simmer for a few minutes, and then add the beans, kale (remove the stalks first), and black pepper. You may top this off with some parmesan cheese if you so desire.
